Without applying a Water of Youth, a horse will age 2 months every night, but only if you work them that day. If you do not work a horse one day, they will not age.
If you do apply a Water of Youth, a horse will age one month every night if you work them that day. If you don't work the horse, it still won't age.
There is a Black Market item called Morpheus' Arms that allows you to age a horse an indefinite amount of times up until they reach age 30. It costs 3 passes, and can only be used on one horse (e.g. you cannot use 1 MA on multiple horses).
