It all depends.

If you are very dependent (for lack of a better word) on meat (Eat it every day, or if you have a deep love for it) you may want to take it in stages, eating a little less every few weeks, until it's gone from your diet. If you don't have a super-strong relationship with your meat, you can drop it in a heartbeat. I, for one, saw food inc. and went from meat every other day to vegetarian without and transition, and have had no ill-consequences.
