The process of making smoked salmon is as follows: soak the grilling plank in water for one hour. Preheat grill to medium heat, prepare the salmon and lightly season. Remove grilling plank from water and place the salmon skin side down on the plank. Place the plank on the center of the grill, close the grill and allow to cook for 20 minutes until the fish is tender. Turn off the grill and allow the salmon to rest for two minutes before you take it off the grill.

Once you are ready with all necessary items in place, you start by preheating the grill between medium-high. Next, you need to spread some oil on the rack, grilling basket, or aluminum foil. It depends on the fish and the thickness, but generally, you want to cook the fish until it flakes easily. White, flaky fish (like cod or tilapia), you'll want grill for about 5-7 minutes, turning once (I prefer to let it cook a little longer on the first side, so 4 minutes on one side and 2 on the other). Fish like salmon or swordfish steaks take about 10 minutes.
If you grill it over indirect heat (off to the side of the coals or burner) it takes about 20 minutes. Over direct heat it can be done in about 5 minutes, but there is a risk of burning it.

You don't have to soak corn on the cob at all to grill it. Simply rinse the corn thoroughly in cold running water, lay it on a piece of tin foil large enough to wrap the ear of corn in, add a teaspoon of butter, a little salt and pepper, and seal it in the foil. It doesn't take long for fresh corn to cook on the grill; probably no longer than 10 minutes. If you over-cook, the corn may be tough.
