The more you seed the better. It seems like fairness requires that you seed enough to keep the torrent alive, otherwise you are selfishly "using up" the resource.
Most people seem to think that to sustain the torrent, you could give what you get -- a 1:1 ratio. However, you can expect that some people will not seed at all. This means that in the long run, if everyone who does seed only seeds 1:1, it will not actually be enough to keep the torrent alive. Just like with chain emails, you can't assume the first person you send it to is going to send it on and "keep it alive." So, if you care about having a "sustainable" rate of seeding, you should share more than 1:1.
If seeding is slowing your connection to much then set the bandwidth to only use a percent of your total upload speed. If your upstream speed is 500 kbps then set your the upload limit to 250 kbps or some other fraction of your total bandwidth. This helps make it less noticeable that you are uploading. If you leave it on at night while you are asleep, you will usually find that torrents have seeded to their limits when you get up in the morning.
