This will depend on several factors, some of which are:
If the temperature is 50 degrees or above, you only have an hour or 1 1/2 hours at most to field dress it and get it on ice or refrigerated. But if the temperature is below 50 degrees, then you will have at least three hours, even more, if the temperature is 40 degrees or lower.
Once it is field dressed, again, depending on the temperature, you can leave it hanging, or on ice for as long as a few days if the temperature is 40 degrees or below.
But another thing to consider is if the deer was shot in the stomach or intestines, then you do not have as much time, even if the temps are colder because bacteria from the internal organs will rapidly spread throughout the animal, rendering it unsafe to eat.
Also, if the animal was not shot, yet you can tell it has only been dead for a very short time, DO NOT take it for consumption. What ever disease killed the deer will very possibly have contaminated the animal, rendering it unsafe for human consumption.

You shouldn't let deer, or any wild game meat sit in the fridge for a long period of time. It should be unfrozen (on a plate in the refrigerator) and then cooked immediately.
Supposedly deer can see shades of blue. However, If you have good cover it shouldn't be an issue.... I hunt with blue jeans and have been for a long, long time. Mostly deer will smell you before they see you. Or at least that has been my experience while hunting.
