Many millions of the workers on the Great Wall were prisoners, POW's and slaves, and many thousands died over the hundreds of years it took to build all the wall's sections.
There have been several studies to try to answer this question. The Great Wall of China was built by different dynasties. The wall also has many remote sections which are difficult to get to. In 2009, one archaeological survey announced that the length of the wall of the Ming Dynasty (1368-1644) is 8,851.8 km (5,500 miles) long. Another archaeological survey found that the entire wall with all of its branches measures out to be 21,196 km (13,171 mi).

The ceiling grid is not going to help all that much. not on that long a wall. How far above the ceiling is the roof and is there something there that a brace could be attached to? A V brace every so often or do the wall in sections with a longer stud between each section that extended to the roof structure.
You should or at least each wall at the same time. You could pour it in sections as long as the rebar was joining each section. The problem would be at the joints. How to form up a section of the footing with the re bar in place. If the rebar is not tied together, the wall will move and never be what it should be.
