You are looking for 170 degrees F in the breast, 180 degrees F in the thigh, and 165 degrees F in the stufing (for a stuffed bird). One important tip is to preheat the oven to 450 degrees F before putting the turkey in. Once you put the bird in the oven, then reduce the temperature to 300 - 325 degrees F. The high initial heat will seal the outside of the turkey and result in much juicier meat.
Turkeys cook just fine in a convection oven. If you are nervous about it, and you have an oven where the fan can be turned off, you can always do that, but its not a problem at all to leave it on. If the oven is on convection setting, just remember to reduce your oven temperature by 50 degrees (convection ovens circulate warm air and thereby are more efficient at cooking foods, and cooking them more evenly). That's pretty much it, everything else is the same.
I only know that in a regular oven it is 20 mins. per lb. If you still have the manual for your oven, look to that for an answer. Or go to the website for your particular oven. They may have info there that can help you.

You bet. A convection oven has a fan in it which helps distribute the heat more evenly in the oven. This results in the turkey being cooked more evenly and more quickly. I used to cook up to 12 turkeys at a time in a commercial convection oven. They are great.
