Blanching with oil in a deep fryer involves putting food in hot oil for a few minutes to lightly cook it, and then removing it from the oil. For example, twice fried french fries are first blanched in a lower temperature oil (usually 325 degrees) for a few minutes to lightly cook them and soften them.
