To prevent brown discoloration brought about by the action of enzymes, immediately soak the peeled potatoes in a bowl with cool water. • Slice potatoes into long strips and pat them dry using a paper towel before frying. • Turn on your deep fryer and allow the oil to heat until it reaches 320 degrees. Slowly add a bit of the dry strips of potatoes to the deep fryer, and slowly increase the temperature to 360 degrees. Let the strips stay until the desired crispness is achieved. • Remove fries from the deep fryer tray placing them on a plate laid with paper towels. The paper towels will help drain excess oil out of the fries.

The real reason is because of the low moisture content in the food. Since McDonald's food is high fat, that leads to low moisture content. When there is low moisture content, the meal cannot decompose properly.
