I don't know how long it will last, but I just cooked some that I had in the refrigerator since Dec or so (to see if it'd cook ok), and the pasta part cooked fine, but the cheese was rock solid. So anything more than 6 months definitely won't do. (Sorry it's not a definitive answer, but it's something I could have used an answer to, so I thought I'd put in my two cents.)
Cheese does not need to be cooked, its mostly eated 'raw'. It can be 'cooked' for example Cheese on toast, cheese sauce and cheeseburgers, but then all you need do is heat it long enough to melt which only takes a minute or two.
Between 3-7 minutes, depending on how soft you prefer it. Cheese tortellini float when they're cooked.
