There's no practical way to keep track of the number of coins that remain in circulation vs. those that are damaged, lost, etc. It's enough to say that the Mint makes several billion cents every year and the Lincoln Memorial design has been in use for 50 years.
If you're interested in the original mintage figures for each year, you can find them at the link below.
About 120,000,000
Because 1959 was the first year of the Lincoln Memorial design after 50 years of "wheaties", people hoarded many of them.
The mintage of the 1968-S Lincoln cent is the lowest memorial reverse coin at 258,270,001 Business strikes and 3,041,506 Proof coins.
Philadelphia minted 754,110,000 cents for circulation in 1963, plus 3,075,645 proof coins.
Out of the 186,775,000 that were struck nobody knows how many are still in circulation.

It took 3,600 people to built the Lincoln memorial
It's hard to say. Canada stopped minting pennies in 2012, and since early 2013 the government has been withdrawing them from circulation. Before they started withdrawing pennies, though, the government estimated that there were 35 billion in circulation.
