It is estimated that they save over 1000 lives a year, just in the US. This is taken from accident statistics where drivers and passengers survived impacts because they were not thrown through the windscreen. But, of course we don't know all of the incidents, and this could change quickly. More people are wearing seat belts now than they used to. But now it has become a habit to wear them. So we don't know how many lives were exactly "saved".
In theory, everyone wearing a hard-hat is likely to have had their life saved.
Countless, there is no possible way to put a number on the lives saved by riders wearing helmets. There has been no research or tally to ever determine a number of lives saved and I'm sure the number increases daily as more and more accidents occur.

National Traffic Safety Board estimate that approximately 9500 lives are saved a year from the use of seatbelts. This is from a NTSB driver's ed video.
