The leader of Mexico who fought against the Texans during the Texas Revolution was General Antonio López de Santa Anna. He was the president of Mexico and commanded the Mexican army during the conflict, notably at the Battle of the Alamo in 1836. Santa Anna's forces ultimately lost to the Texan rebels at the Battle of San Jacinto, leading to Texas' independence.
Bowie is famous for his special Bowie knives collection and he fought for the Texans in the Alamo battle with Santa Anna. He was born April 10, 1796 and he died of pneumonia on March 6, 1836.
According to the official history, Santa Anna tried to transform Mexico from a federal republic into a centralized republic, removing sovereignty among its former constituent states. This angered Texans and Tejanos who fought and won for their independence. However, the motives of the Texan Revolution (1835-1836) have a much darker origin: in reality, they fought for their right to keep slaves. See related questions for further details.
