The columns in a database table are called fields and the number of fields is exactly the number of fields that were included in the table when it was designed. It could be as few as 1, up to a maximum of 255, although a table with anywhere near that number will probably have been badly designed.
A database can be 2 gigabytes, minus the space needed for system objects. The amount of tables are then limited by memory. You can have up to 2048 tables open in a database, if your computer memory can handle it, but no database should have anything like that amount of tables anyway. You would split it into multiple databases with appropriate tables in them and then you can still link tables between databases if necessary.
