First you need to clarify "stalk of celery". Some people refer to the entire plant as found in the grocery as a stalk. Others refer to one piece broken from the rest as a stalk. The individual pieces of celery that share a root are also called "ribs" of celery. If you mean one rib, then you might get 1/2 to 2/3 cups if you dice it up.
Have you noticed celery comes in a variety of sizes . How would we know if you are looking a t large or small celery, with a weight differential of 2-4 oz.

That really depends on how large the celery stalks are. Your best bet would be to just slice them up and put them in a cup. If you need the stalk in a whole for the recipe than 3 large stalks should be about right. Happy cooking.
