12 - 24 cup depending on size. I usually fill a large bowl with 1 large head of shredded iceberg lettuce, the bowl holds 1 1/2 gallons. So about 24 cups, more or less, for a large head of iceberg lettuce. I've had at times purchased smaller heads of lettuce that took 2 to fill the bowl.

Yes, these are called baby greens or mesclun. You can snip any type of lettuce leaves while they are small and use them in salads. More will grow and you can snip them again.

Add to the bowl. Cut pepper lengthwise into thin strips. There should be about 1 cup. Add to the bowl. Add oil, vinegar, salt and pepper and blend well. Serve immediately.
The problem with giving an answer is: what type of lettuce? what does each leaf weigh? are they shredded? It just impossible without more info. The more space each leaf takes up, the fewer the number of leaves can be put into a cup.
