You will get two to three cups of tortellini after cooking one cup of frozen tortellini. The cheese filled pastas increase in volume and weight by 2 percent-3 percent.
I had some three cheese tortellini that was in a plastic container that was dried kind. I don't know how long it will last, but I just cooked some that I had in the refrigerator since Dec or so (to see if it'd cook ok), and the pasta part cooked fine, but the cheese was rock solid. So anything more than 6 months definitely won't do. (Sorry it's not a definitive answer, but it's something I could have used an answer to, so I thought I'd put in my two cents.)
It needs to be cooked in a kosher vessel and have kosher ingredients. If purchased, it (or the bakery) should have kosher-certification.
It does not have to be, however it is quite a bland cheese in itself and is better when cooked in a dish.

This will vary by the size and type of macaroni, as well as cook time and method. I'd estimate about 2-3 oz of dry macaroni would equal 2 cups when cooked. For example, one box of Kraft Mac-n-Cheese (7.25oz) makes about 3 cups of cooked pasta when cooked according to the standard directions on the box.
