If you drink A LOT of water you can survive for around 30 days on average. But it really depends on factors such as your weight, the amount of fat you have (more fat = longer you survive), your health and so on.
For example, an anorexic person consuming only water would probably only manage a week or two before collapsing and ending up in hospital.
