In Pokémon Red, there were only a total of 3 evolutions for Eevee and they were Vaporeon, Flareon and Jolteon. In order for it to evolve into Vaporeon, you would need to use a Water Stone on it. In order to evolve it into Jolteon, it would require the use of the Thunderstone being used on it and in order for Eevee to evolve into Flareon, you would need to use a Fire Stone on it.

Normally you would not be able to recruit the evolved form of a Pokemon in mystery dungeon, especially the Eevee evolutions, though people have done it before. If you want an Umbreon, you'll have to recruit an Eevee first and then evolve it.
