That is hard to say. It depends on your background, the courses you are taking, and the accommodations and support the college is willing to provide. You should absolutely discuss this with the counseling services at the college. With medical certification of your dyslexia, the school is obligated to provide you with assistance. The determination of how many hours you should take would be empirical: take what you can and drop what you cannot.

Most all colleges will convert quarter hours into semester hours. As long as you attended a regionally accredited college or university, you should be fine.
