If you're using one computer for everyone then you can only play it one at a time.
It doesn't matter how many people, as long as they have their own minecraft account 200 people can log into Minecraft on one computer and play one at a time.
If your talking about how many people can join a "local" (in the same house) multiplayer server then you can have as many people as your hosting computer can handle. The higher end the host computer the more that can join a LAN server.
If your talking about an "open" server (over the internet) then it's usually the internet speed that will slow everything down. If you have a lower end DSL/Cable connection then usually only 3 or 4 can play without too much lag.

If you mean on SMP, then the server can be set to accommodate any number of connections, provided the server can handle the traffic.
