Depends on how you're cooking the taters. Large baking potatoes run about 12 ounces, so you'd need 150 pounds. Serve them as hashed browns, scattered, smothered, and covered, and most people will be happy with an 8-ounce serving. A serving of escalloped potatoes probably has 4-6 ounces of taters. And if slice them really thin and french fry them until crisp, a serving of potato chips is one ounce (but fresh, hot and homemade, people will scarf down three servings.
Taters are tasty, nutritious, and versatile. And they keep well. I'd make tater soup, baked potatoes, and tater bread. Just back up te truck to my kitchen, fellas!
