It's kind of unclear who specifically is the one patron saint of chastity, but many various saints have a strong connection to the subject. On the female side, we have St. Agnes of Rome from the 200's BC, Maria Goretti (from the 1800's) and of course the Blessed Virgin Mary. For men, some appropriate patrons of chastity would be St. Thomas Aquinas; St. Francis of Assisi; and even Saint Joseph would be pretty appropriate.
