It really depends on how much tomato will be in each salad. I would make my own salad with 1/3 of a tomato in each salad, so 3:1. That would be a generous amount of tomato for people who really like tomato. You could stretch that to 4:1 very easily. This would be for a medium of 3" inches round. I also prefer that they are 100% red and ripe, but not soft. The best way to insure that is to buy them several days in advance and let them sit until they are ready. They will last a good 4 days or loner past ready, depending on the storage temperature. Do not refrigerate tomato, keep it at room temperature, 70 to 80 F.

If the tomatoes are not blemish free, have a few extra to account for waste. Preparing food for 150 people is no small task, be glad if the salad is all you have to make.
