Yes. There are all sorts of ways of retrieving information from Excel files, so it depends on what kind of information you want to get.
Open Excel. Go to the File menu and choose the Open option. From the dialog box that comes up you can find the file you want to open and then click on it. You could also press and hold the Ctrl key and then press O when in Excel to start the process of opening a file. Another way is to open Windows Explorer and go to the disk that an Excel file you want to open is on and double click on the name of the file. It will open Excel and the workbook.
Formatting. There are many ways of formatting dates in Excel.

Yes, you can save to as many different files as you like. If you would like to save half of the file to file one and the second half of the file to file two, there are several ways you can do this. My preferred method is to copy the original file to as many files as you like (just give the files different names). Then, for each file, delete whatever you do not want to save in that file. This method may take a little longer than cutting and pasting to multiple files, but it is the best way to recover from mistakes (at least until you delete content in the final file).

While not universal, most applications will allow you to save a file or document for the first time by going to File > Save As. Subsequent changes to the file can be made by going to File > Save. Also after making changes to a document, when you try to exit the program without saving, it will ask to confirm and allow you to save the document.
