The general rule of thumb is that one Dexter bull can service as many cattle as he is months old. So if a Dexter bull is 20 months old, he can service up to 20 cows. The maximum he can service is up to 50 cows.
This depends on the breeder and your area. Some Dexter breeders may sell for more than others, depending on the quality of the bull.
You may thinking of the longhorn, or even the shorthorn.

That all depends on the bull itself. Not all bulls have horns, and not all bulls weigh 2000 lbs. It also depends on the breed of the bull and its temperament. Normally bulls, as prey animals, choose to flee from a predator like a polar bear rather than stand and fight, and a polar bear wouldn't know what to make of a bull in the first place, since they don't actively hunt cattle, but instead seals and walruses, and maybe the occasional caribou and muskox. Maybe if the bull was a little Dexter the polar bear might win. But if it was against a 2200 lb Spanish Fighting Bull the polar bear may loose. The polar bear may even lose if it's against a hot-tempered Chianina bull. So who knows?
There is no such thing as a "female bull" nor a "male bull" especially in reference to cattle. Bulls are not a species of an animal, rather the name for the gender or sex of an animal, like bovines ("cows" or cattle), whales, moose, elk or bison. Bulls are males whereas cows are females. UNLESS, however, you are talking about pit bulls, and by "bull" you are using this as a shortened name for such a breed of dog. Therefore, in order to answer your question, a female pit bull is called a bitch, and a male pit bull a dog.

It should be a more of a concern of how much the bull weighs over his age. The bigger the bull, the more likely he'll cause injury to the heifer. Usually the older the bull is the bigger he'll be. Yearling bulls are best used for heifers, more often those that have EPDs for small calves. Brahmans are typically later maturing, so a two-year old bull may be old enough to service a heifer.
