when the environment changes the animal/plant must adapt to re-suit its environment. unfortunately, evolution can not occur with out a mutation but when one does occur and it is effective, more-so that the 'original' animal then the future offspring will have the same mutation. This is how and animal evolves to suit it's changing environment. When, for example, it gets colder and colder, animals become more and more furry to adapt to their environment :)
The perfect example of this is the polar bear. The ice caps are melting and the bears are loosing ice that they live on due to global warming. They can swim fairly well, but they are drowning because they can’t find the ice they need.
The changing environment can result in extinction or evolution because it forces species to adapt. The adaptation of the species may result in physical change for survival.
Survival pretty much depends upon having Food, so disruptions to one's source of sustenance will cause many types of changes.

Actuallly, because of their isolated habitats, island species are more vulnerable to extinction. Introduced species,such as cats, mongoose, and others have led to the extinction of many birds especially, because of their inability to understand the tactics of the alien predator.
