When the flood waters receded they left a great amount of very fertile soil, thereby allowing crops to be grown. Without this there would be much less arable land, therefore the crop yield would be much less and sustain fewer people.
The ancient Egyptians might not have settled there, thus no pyramids, Sphinx, etc. And, perhaps, no Egyptian Empire at all.
