IMHO, mechanical or chemical engineering degrees would provide a strong background that utlizes the businesses that would be concentrated there.
A bachelors degree (4-5 years) is needed. Bioengineering is an emerging field, so some universities don't yet have a bioengineering degree. At my school, bioengineering is a concentration (like a minor) within Chemical Engineering. Other schools, such as Rice University in Texas, have a bioengineering degree program already in place. Check with whatever school you are considering to see what they offer.

Michigan State Univeristy offers an outstanding distance learning degree. They also offer a engineering degree via web based training. There are several engineering distance learning programs. One such program that offers degreed engineering classes is the Texas Tech University distance learning program.
Based on my knowledge, some architectural engineering schools are the University of Kansas, Auburn University, Cal Poly SLO, Drexel University, Kansas State, Penn State, and University of Texas at Austin. There are many other colleges that have an architectural engineering program, but the colleges listed above are more well known for their program in the engineering field.

If you are looking for a specific type of engineering, then I would first consider looking at the universities in Texas (such as the University of Texas). However, if you are just looking for a few extra courses to take to add to your degree, I suggest looking at Texas Tech University, who offers post-undergrad courses to add to your degree.
