Well, this is a tough question First you don't say how big the chickens are
second you don't say how much chicken you want to serve per person


Here is an example. If you wanted to serve a whole chicken regardless of size to each person then 40 chickens


not to be wise :)


but let us also say that you can't put the bones , fat and skin into the sandwich
so this is what we will call trim.
You can find out the 'after trim weight' two ways
Buy a chicken and trim it and weigh whats left

I'll guess and say that 60% of your whole bird is going to be lost to either trim or fat/moisture loss


so if you bought a 4 pound bird then after cooking and trimming you'd have (4*.6=2.4lbs lost) so 4-2.4= 1.6 pounds of usable bird


You'll probably want to give each sandwich a 4 OZ portion so we need to convert 2.4 pounds to ounces
1.6*16=25.6 Ounces per bird
you've got 40 People so 40*4=160ounces needed of pulled chicken


So take your needed and divide by your bird
160/25.6=6.25 birds for one sandwich per person


thats a skinny 4oz sandwich, you might want 6 or 8oz so do the math to get your answer


Now it depends if they get one sandwich (that is your call)
It also depends upon how well you trim the birds
