You can't add butter to skim milk and make whole milk. What is missing from whole milk is the cream. Butter is made from cream - the two are not equivalent. But...you can add the following 'creams' to 1 cup of skim milk. 1 1/2 teaspoons heavy cream + 1 cup skim milk = 1% milk

1 Tablespoon heavy cream + 1 cup skim milk = 2% milk

2 Tablespoon heavy cream + 1 cup skim milk = whole milk Heavy cream has 36% and 40% milk fat (The initials m.f. will be printed on carton.) 1Tablespoon light cream + 1 cup skim milk = 1% milk

1Tablespoons + 2 teaspoon light cream + 1 cup skim milk = 2% milk

3Tablespoons light cream + 1 cup skim milk = whole milk

Light cream has 18%-29% milk fat.

The ingredients in the butter in my fridge are listed as Cream, Milk and Salt.

You can add UNSALTED butter to any type of milk to increase the milk fat content. Butter has a milk fat content of 80%.

Also listed on the butter in my fridge - 2 teaspoons of butter (10g) contain 8 grams of milk fat.

One liter of skim milk weighs ~ 1032 grams.

To make one liter of 1% milk, melt 2-1/2 teaspoons of unsalted butter (10g) and fill up to the 1 liter mark with skim milk.

To make one liter of 2% milk, melt 5 teaspoons of unsalted butter (20g) and fill up to the 1 liter mark with skim milk.

To make one liter of 4% (whole) milk, melt 10 teaspoons of unsalted butter (40 g) and fill up to the 1 liter mark with skim milk.

The dairies remove all the fat and then mix whatever they need to make all the varieties of milk, cream, butter, etc.

You can add heavy cream (whipping cream) to skim milk or any other variation of milk to make milk or cream to whatever fat content you want. Heavy cream has a fat content of 35-40% depending on where you live.

You can make whipping cream by adding unsalted butter to skim milk, or any other type of milk. A pound of butter weighs 454 grams. 80% of that 454 = 363 grams of milk fat. So melt that pound of unsalted butter and top it off with enough skim milk to make one liter of 36% whipping cream. Or modify the recipe according to what type of milk you have available.

So even though the stores may be closed, you may have the ingredients to make some of those things you thought you had to do without. I would guess that most people would not have unsalted butter ready at hand, but it is easy to find on store shelves, and is a good substitute for the salty variety.

And mixing your own may save you a few bucks too.
