They paid them below mimimimn wage, didn't provide breaks, didn't provide restrooms, didn't provide any shade, and gave them short handled hoes that made them stoop over all day. If you have never seen a field of grape vines or been working in 109 degree heat this maybe hard for you to understand, but no matter an employer needs to treat the people who work for them with respect and to pay them a living wage.
This question seems to speak about US history. In the South, most crop workers were slaves. In the North, farmlands were worked by farm owners and their paid farm workers.
