How many cans of corn to buy to feed 40 people depends partly on the size of the can and partly on how much other food you will be serving. If you allow a half an average-size can of corn per person then to feed 40 people you will need 20 cans of corn, 10 creamed and 10 whole kernel.
Corn does not need to be blanched before freezing. The excess liquid in it will cause the corn to expan upon freezing and then wrinkle more when defrosted.
