No, combining yeast with sugar will not produce gas. Yeast must be dissolved in water with starch or sugar in order to begin fermentation producing CO2 gas.
It's a result of the fermentation process. The wine is bottled and has sugar added to it. The yeast feeds on the sugar and dies when the sugar is gone giving off gas. Because the bottle is sealed the gas can't escape and stays in the bottle.
Yeast consumes sugar and expels gas. It is this gas that causes bread to rise. Yeast also consumes sugar and produces alcohol during fermentation. So, if you're trying to make wine and there is no yeast on the grapes, and you don't add any, there is no fermentation.
Fermentation and respiration are very different things. Fermentation is the chemical breaking down of a substance (such as the souring of milk) produced by an enzyme and usually accompanied by the formation of a gas (bubbling). Respiration is breathing.

Beer is produced by fermenting germinating cereals , while wine is produced by fermenting crushed grapes. Yeasts are also used to ferment bread and cause it to rise (the alcohol produced by the fermentation is evaporated in the baking). Yeasts are present in the air, especially near a place where bread has been made, so fruit juices left in the open in your kitchen will naturally ferment into wine.
