It depends on how many dishes you are serving needing gravy. But, if you are also serving a chicken dish with a cream gravy, that may need another 2 gallons of cream gravy for 100 people. Normally I expect 1/3 cup gravy for each portion requiring gravy. so for 100 people per portion it's a bit more than 2 gallons of gravy.
