It depends on how many dishes you are serving needing gravy. For instance, meatloaf and mashed potatoes will need about 1/2 cup of brown gravy per portion. that would require about 3 gallons for 100 people. But, if you are also serving a chicken dish with a cream gravy, that may need another 2 gallons of cream gravy for 100 people. Normally I expect 1/3 cup gravy for each portion requiring gravy. so for 100 people per portion it's a bit more than 2 gallons of gravy.

it depends on how much gravy granules you put in when it was hot. the thicker the gravy was when it was hot determines the solidity of the gravy when its cold. it will never be completely solid but stodgy.
