Yes indeed. The acid from the lemon juice prevents oxidation in fruits. If the extra tartness of the lemon juice doesn't do it for you, you can also dilute Orange Juice to get the same properties. Just mix 1/4 cup juice to cup of water. It won't change the flavor of the apples...or bananas for that matter! Bananas make a surprising addition to fruit salad if they are treated with the orange juice mixture.
