The conversion rate between mustard powder and prepared mustard is about 3. This would mean that you must use 3 times as much real mustard to substitute the powder. IE, 5ml (1 tsp) powder = 15ml (1 tbsp) prepared mustard.

If you have put too much mustard in your fish, you can dilute the mustard by adding other ingredients. Fish cakes would be my choice (mix the fish with mashed potato, onion, a little flour, make into cakes and bake) or fish stew (stews are very flexible, add any vegetables you like).

Mustard is a condiment so it would be used in moderation, at the top of the pyramid. It does not have much nutritional value.
