You can but your finished recipe will taste of lemon not vanilla.
Either the sugar has not dissolved properly during the heating process. ( More likely to happen if you used granulated sugar). It may have overcooked and curdled. Alternatively, you may have got the proportions of ingredients wrong - too much sugar, not enough lemon juice or butter. Might be best of try a different recipe for lemon curd next time.
