The random items you find throughout the game are used for shop quests. The shop owners at the island where your base is have the option for it, you can then trade them items for the ability to buy weapons, armor, better poison, and other upgrade.
Probably only a couple dollars for the first two, and maybe a bit more for Revelations. Gamestop don't pay much for trade-ins.
During the story, you get to meet a few interesting personalities. One in particular, La Voulpe (The Fox), who is a skilled assassin and will teach you a few tricks of the trade. You may meet some former assassins, but to my knowledge, before the final mission, a congregation of Creed members will assemble in the Codex Room of your villa. I'm not going to divulge who they are, it would be a complete spoiler to the story. Having said that, I've continued to play after the story was finished and I've not seen any of them again or any other assassin.

Pawn shops usually give really depreciated value; your best bet would be to sell them to a 2nd hand videogame store. They always pay more. You'd probably be looking at $20-$30 for all 3.
