The fusion of hydrogen to helium at the core is driven by the immense heat and pressure. If you were to add enough water so as to significantly increase the sun's mass it would only increase pressure at the core and make the sun burn hotter. One possible exception would be if you added enough water that the added mass would cause the sun to stop fusion and collapse into a black hole. This would probably require several hundred to several thousand solar masses.
