Sheep are already 'tame'.
The only wild animal that can be tamed are wolves.
It happens instantly. Feed one some wheat, and the moment it contacts another sheep, a lamb will be born.

I'm pretty sure it does. Well, acctually for me it does. If you want it to grow back, make sure you have plenty of grass for the sheep and feed at least 2 sheep wheat to mate and make a baby sheep, also, keep them happy by feeding them grass. To feed them, put grass down (Grass Block) and they eat it, it turns into dirt, replace it. Once you have done this, the sheep should grow back in somewhere around 5-10 minutes. Take 3 wheat and fill a row of the crafting square. It used to require 6 wheat, but this was changed in 2010 Feb. Requires 6 wheat. Fill the bottom 2 rows of the crafting square with wheat. Example: A=air W=wheat A A A W W W A A A

It really depends on how big it is
Once you have planted seeds on dirt you tilled with a hoe, wait for them to grow up into ripe wheat. This will take a day or two. When the stalks are yellowish and the tops are brown it is ready to harvest. Hit it with anything, including bare hands, and it will drop wheat and more seeds. If by harvesting you mean getting the wheat once it is grown, punch it.
