after working many years as a manager in a fast food restuarant, you would be surprised at how long oil stays usable. I have seen oil in a deep fryer be used for over a month with daily use. This of course was strained daily, and fresh oil added as needed.

Many factors will determine how long you can use it.

Salt, Flour, Cornmeal, and Water (from frozen foods) will cause it to go bad faster.

Try to use these sparingly near the oil.
