Honesty is the best policy. Sometimes differences between a couple can be a good thing, but if they cause arguments or pain then they are not suited for each other. If both can take a little from each others opinions then that's maturity. It sounds from your question you have made up your mind and you've made a good decision. The person you are with is difficult and should seek counseling. Just tell them that the differences between you are too vast and that's not what you are looking for in a healthy relationship, but you've had many fond memories of them. This won't help of course and there is simply no way you can not hurt this person, but thing of it this way ... if you continue to ignore this problem and stay with this person things will get worse and perhaps uglier and you'll end up hurting each other even more in the end and perhaps both of you will end up bitter.
