How should you store scotch bonnet chilis?

Chiles can be stored in one of three ways. They can be dried out to be used as a spice ingredient. They can be par boiled and frozen to add to stews or dishes later. This makes them very limp too. My preference is to pickle them. They last for years this way and you can get the recipe for the pickling juice online. There are many different recipes, so you may have to experiment with a few to find your favorite one.

You can store canned chili (unopened) in a cupboard or pantry, but homemade chili or canned chili that has been opened must be stored in the refrigerator or freezer. In the fridge, cover the chili with saran wrap, aluminum foil, or even better put it in a Tupperware container. In the freezer, you should put the chili in an airtight container to protect against freezer burn. You should try to eat the leftover chili within a week in the refrigerator, while the chili in the freezer can last up to six months (though the fresher the better)

Try this neat Freezer trick. Take your extra homemade chili and fill plastic ice trays with it. Over fill slightly. Freeze the chili. When frozen pop out the cubes of chili and place in a freezer zip lock bag. Now when you want two Hot Dogs just thaw out two cubes, three hotdogs thaw three cubes and so on.

You can dry them out or pickle them.

Don't store fresh chillies in plastic bags or containers; they will go soft and eventually mouldy. Put them into a paper bag - the sort you use for mushrooms is fine - twist the top, and store them in the fridge. After a time they will dry out; they can still be used as you'd use the fresh ones - chopped, sliced, crushed, or placed whole in sauces and removed when sauce is sufficiently hot.
