We now know from archaeologists that there had been no city at Jericho for many centuries before the arrival of the Hebrews. From a purely historical perspective, the city of Jericho had long been abandoned, and there was only a small village on the site during the Late Bronze Age. The village had no walls to be measured.
The Book of Joshua, in The Bible, does not tell us how thick the walls would have been at the time Joshua caused them to fall down.
