Your best bet is to run through an A/V receiver. They generally have methods to turn 2 channels into 5, but if that is not possible, connect the 2 channels and listen through whatever of the speakers you choose, but it will not be all of them :(
Dvd players are rarely 2.1. They are quad stereo at best. I used 2 pairs of 1/8 jack y's coming off a a y that went from the red and white RCA type to a male 1/8 head phone jack. So
From DVD 6' red/white to 1/8 headphone
from 6' y I used a single female to dual male 1/8 y
from the dual 1/8 I used two more of the same to get the 4 connections.
You can't.
5.1 means 5 speakers and a sub woofer;
2.1 means only 2 speakers and a sub woofer.

It is possible to convert your speakers to wireless speakers but it is very expensive.
