I had the same problem, so I called a phone number to get answers. The good news is, I got an answer, the bad news is that the solution takes much longer than it should.
In order to set the day of the week (i.e. your watch says FRI when it should say WED), you have to do it the long way. You have to set the time to change the day: Pull the knob out to its furthest out position, and twist it, so the time is increasing (clockwise). You have to keep doing this and keep doing this, until the day changed. For me, I had to set it 5 days forward, and it took me about 10-15 minutes of constant twisting until it got there.
As for the date, you need to pull out the same knob, but don't pull it out as far. It should only be partially out, and then twist it down to change the date. The date will only increase, it won't decrease (until you go from 31-1). I hope that helps.
