They store carbon by not completely breaking down and recycling organic matter. The key is for organic matter to remain somewhat intact and be buried out of reach of other plants so that they are removed from the nutrient cycle. Forests tend to have cooler soil temperatures than say grasslands so that organics do not break down as fast. Treed bogs are probably the best forest type for storing carbon as the soil temperature stays very cool and organic matter won't break down in the absence of oxygen caused by a high water table.
