Most began as wooden mott and bailey types and eventually evolved into stone. The wood structures were very prone to fire and when gun powder was introduced to Europe the wood couldn't withstand the assault from cannon fire.
I'm not sure but i think castles were built of of mud and stone but when that didn't work they were built out of wood. When the they found that the wood caught fire they started to build castles out Stone. After a while people destroyed castles using Gun Powder. Then after this the castles lost there usefulness.
