yes, motte and bailey castles were very easy to attack as they were made out of wood and could burn very easily. whereas if you were talking about stone keep castles which were pretty much like motte and bailey castles then it would take time to burn as they were made out of stone.

For example: The Concentric castle took years to make because it had inner walls made of thick stone. Castles changed because when a place expands and changes, castles need to get bigger and better with it. Also, they need to be prepared for enemy attacks.
